120g jasmine rice (microwaveable to save time)
1-2 sirloin or rump steak cut into finger width strips
1 large onion - quartered
400ml tin coconut milk
1 tbs of massaman paste
1 tsp tamarind paste
Ginger chiken stock pot - cube (you can use just chicken stock)
150g grean beans - trimmed (you can use mangetout too)
Cooking oil 1-2 tbs
Handful nuts (optional)
Instructions
If you are cooking the rice then start with the rice now and cook according to the instructions.
If you are using microwaveable rice then start with your beef.
Sear the beef - heat a little oil in a pan over a high heat. Place the beef slices in the pan, sear them both sides - then remove.
Lets make the curry base
Reduce the heat of the pan, add the quartered onion and fry for a minute
Add the massaman paste and fry for 1 minute then pour in the coconut milk. Mix well for a further 2-3 minutes.
Add the vegetables
Add the ginger chicken stock pot and the tamarind. Mix well and gently bring to the boil
Add the green bean and half the peanuts if using
Add the beef back to the pan
Cook your microwave rice now if using
Serve up and enjoy
