Pre heat the oven and lets make a start with the fish.
Put your fish into an oven proof dish, evenly spread 1tbs of green pesto onto each one.
Place your bacon on top of the fish, 2 rashers each (you can use more if you like)
Put the dish into the oven at 180c for 20 minutes or until the fish is flakey.
Warm up a wok with the oil, once hot add the sweet potatos.
Keep an eye on the pan, keep moving the potatos around the wok for a good 5-8 minutes until they are cooked, soft on the inside with a crispy edge.
Start to add the kale, spinach and welt it all down for a further 5-6 minutes.
Add the spring onions and cook for another 3 mins.
Season to taste with the salt and pepper and turn down the heat to a very low flame.
Get your plates ready, take the fish out of the oven.
Start plating up with your potato stir fry first and put your fish fillet on top.
