Egg & Tomato Salad with Green Pepper

Ingredients
  

  • 3-4 eggs
  • Big handful of rocket
  • 4 big tomatos cut into wedges
  • 1 green pepper thinnly sliced
  • Olive oil
  • Seasalt & black pepper

Instructions
 

  • Drizzle some oil into your frying pan.
  • When the pan is hot, crack and fry your eggs for a least 1 minute (but fry your eggs how you like them).
  • Put a lid on your pan.
  • Place your rocket into the centre of your plate.
  • Add your tomatoes around the rocket and plate.
  • Place your thinnly sliced peppers inbetween your tomatoes and keep repeating until you have none left.
  • Get your fried eggs and carefully put them on top of your rocket (I hope your eggs are runny)
  • Season to taset..enjoy
