Kepp moving your eggs with a spatual all the time, until the eggs go a beautiful creamy consistency.
Turn of the heat to the eggs.
Put your sourdough under the grill.
When the toast is done, plate everything up and drizzle on or around the plate the chilli oil.
Sprinkle some seasalt on top of the eggs.
