Put your potatoes in a pan and bring to the boil until slighlty soft, then turn off the heat.
Heat the oven to 200C.
Lay the cod, black pudding and tomatoes on a baking tray, with plenty of space between.
Drizzle the fish with the oil and season with salt and pepper.
Bake for around 15 minutes, until the fish is opaque and flakes apart when pressed.
Drain the water from the pan then give the potatoes a good shake with the lid on.
Warm some butter in a frying pan and add the potatoes, fry for 10 minutes.
Add frozen peas and fry until the potatoes are crispy and the peas are soft.
Time to plate,serve the fish over the hot crispy potatoe and peas with the black pudding and tomatoes,season to taste.
