Roast Cod Loin & Black Pudding with Smashed new Potato and Peas

Ingredients
  

  • 2 cod loin - chunky pieces (ask your fish monger)
  • 55g black pudding- sliced
  • 1tsp Olive Oil
  • 2 small ines cherry tomatoes (or use what you have)
  • 200g frozen peas
  • 300g new potatoes
  • Seasalt
  • Black pepper
  • Butter

Instructions
 

  • Put your potatoes in a pan and bring to the boil until slighlty soft, then turn off the heat.
  • Heat the oven to 200C.
  • Lay the cod, black pudding and tomatoes on a baking tray, with plenty of space between.
  • Drizzle the fish with the oil and season with salt and pepper.
  • Bake for around 15 minutes, until the fish is opaque and flakes apart when pressed.
  • Drain the water from the pan then give the potatoes a good shake with the lid on.
  • Warm some butter in a frying pan and add the potatoes, fry for 10 minutes.
  • Add frozen peas and fry until the potatoes are crispy and the peas are soft.
  • Time to plate,serve the fish over the hot crispy potatoe and peas with the black pudding and tomatoes,season to taste.
