Heat a little oil in a pan over a medium heat and fry the thinly sliced pepper for 2 mins
Mix in the garlic paste
Add a spoonful of coconut milk from the top of the tin, then add the thai red paste, stir fry for 2 mins the pour in the rest of the coconut milk.
Put the tomatoes in and bring to the boil simmering for 4-5 minutes over a medium heat.
Stir in the fish sauce and a sprinkle of brown sugar
Add the prawns, stir them gently for 3-4 minutes until cooked.
Warm your rice in the microwave and serve!.
