Thai Red Prawn Curry

Ingredients
  

  • 120g jasmine rice - microwaveable to save time
  • 1 red repper
  • 400ml tin coconut milk (light if desired)
  • 100g sweet cherry tomatoes
  • 160g fresh king prawns
  • 1tbs of garlic paste
  • 1tbs of thai red paste
  • 1tsp fish sauce
  • 1-2 tbs of oilve oil
  • basil
  • lime
  • Brown sugar to season

Instructions
 

  • Heat a little oil in a pan over a medium heat and fry the thinly sliced pepper for 2 mins
  • Mix in the garlic paste
  • Add a spoonful of coconut milk from the top of the tin, then add the thai red paste, stir fry for 2 mins the pour in the rest of the coconut milk.
  • Put the tomatoes in and bring to the boil simmering for 4-5 minutes over a medium heat.
  • Stir in the fish sauce and a sprinkle of brown sugar
  • Add the prawns, stir them gently for 3-4 minutes until cooked.
  • Warm your rice in the microwave and serve!.
  • Garnsih with basil and lime
