Mix all ingredients togehter (leftover humita, eggs, flour)
The Humita should losen in texture and become a more dropping consistency ( this mean if you take a spoon of the mixture it doesn't sit solidly and it doesn't run like cream, it just slowly drops off the spoon)
Heat a frying pan and spray with oil - you'll know when the pan is hot enough when you add a little bit of the mixture to the pan and it instantly sizzles
Add 1-2 tbsp per fritta to the frying pan, depending on the size of your pan you should be able to get 4 in one pan
Cook on one side, you'll know it's cook when you use a spatula around the edges and it moves easily away from the pan
Flip it, cook it, serve it!!!
