Chickpea Salad

Ingredients
  

  • 1 tin of chickpeas, drained and rinsed
  • ½ cucumber, deseeded and cut into half moons
  • ½ red onion, finely chopped
  • 8 sundried tomatoes, finely chopped
  • ½ a packet/block of feta cheese
  • Bunch of mint, finely chopped
  • Bunch of basil leaves, finely chopped
  • 2 garlic cloves
  • 1 tbsp of extra virgin olive oil
  • Salt & Pepper
  • Lemon juice, to taste

Instructions
 

  • Mix the chickpeas, cucumber, red onion, sundried tomatoes & feta together in a bowl until everything is evenly mixed.
  • Blitz together the basil, mint, garlic & olive oil, using a blender or pestle and mortar and add to the bowl with the rest of the ingredients, mix well.
  • Season to taste, add a little at a time and taste as you go.
  • Add the lemon juice, again, add a little at a time to taste
  • Eat straight away or leave in the fridge and eat as and when you need it. This is a great side dish to any meal, enjoy!

Notes

After each step, taste it and make sure you’re happy with the flavors and if you want to add a bit more, add it! Just remember, you can’t remove it once you’ve added it so if you’re unsure of an ingredient, add a little at a time.
