Asian Style Slaw

A very versatile side dish to accompany your meals
Course Side Dish

Ingredients
  

  • 2 large carrots, grated
  • ½ red cabbage, thinly sliced or grated
  • Large bunch of coriander leaves, fine chopped
  • 1 tbsp of extra virgin olive oil
  • Juice of 1-2 limes, add to taste
  • 1-2 red chillies, depending on how spicy you like it. TIP: remove the seeds to reduce spicy intensity
  • Salt, season to taste
  • Spring onions, finely chopped (optional)

Instructions
 

  • Mix the carrots, cabbage, chillies, spring onions (optional) together in a bowl until everything is evenly mixed.
  • Add the extra virgin olive oil and mix until everything has been coated.
  • Mix in the coriander and mix until everything has been coated.
  • Add the lime juice and mix until everything has been coated.
  • Add a little salt, season to taste
  • Eat straight away or leave in the fridge and eat as and when you need it. This is a great side dish to any meal, enjoy!

Notes

After each step, taste it and make sure you're happy with the flavors and if you want to add a bit more, add it! Just remember, you can't remove it once you've added it so if you're unsure of an ingredient, add a little at a time.
