Beef Massaman
Ingredients
- 120g jasmine rice (microwaveable to save time)
- 1-2 sirloin or rump steak cut into finger width strips
- 1 large onion - quartered
- 400ml tin coconut milk
- 1 tbs of massaman paste
- 1 tsp tamarind paste
- Ginger chiken stock pot - cube (you can use just chicken stock)
- 150g grean beans - trimmed (you can use mangetout too)
- Cooking oil 1-2 tbs
- Handful nuts (optional)
Instructions
- If you are cooking the rice then start with the rice now and cook according to the instructions.
- If you are using microwaveable rice then start with your beef.
- Sear the beef - heat a little oil in a pan over a high heat. Place the beef slices in the pan, sear them both sides - then remove.
Lets make the curry base
- Reduce the heat of the pan, add the quartered onion and fry for a minute
- Add the massaman paste and fry for 1 minute then pour in the coconut milk. Mix well for a further 2-3 minutes.
Add the vegetables
- Add the ginger chicken stock pot and the tamarind. Mix well and gently bring to the boil
- Add the green bean and half the peanuts if using
- Add the beef back to the pan
- Cook your microwave rice now if using
- Serve up and enjoy
