Beef Massaman

Ingredients
  

  • 120g jasmine rice (microwaveable to save time)
  • 1-2 sirloin or rump steak cut into finger width strips
  • 1 large onion - quartered
  • 400ml tin coconut milk
  • 1 tbs of massaman paste
  • 1 tsp tamarind paste
  • Ginger chiken stock pot - cube (you can use just chicken stock)
  • 150g grean beans - trimmed (you can use mangetout too)
  • Cooking oil 1-2 tbs
  • Handful nuts (optional)

Instructions
 

  • If you are cooking the rice then start with the rice now and cook according to the instructions.
  • If you are using microwaveable rice then start with your beef.
  • Sear the beef - heat a little oil in a pan over a high heat. Place the beef slices in the pan, sear them both sides - then remove.

Lets make the curry base

  • Reduce the heat of the pan, add the quartered onion and fry for a minute
  • Add the massaman paste and fry for 1 minute then pour in the coconut milk. Mix well for a further 2-3 minutes.

Add the vegetables

  • Add the ginger chicken stock pot and the tamarind. Mix well and gently bring to the boil
  • Add the green bean and half the peanuts if using
  • Add the beef back to the pan
  • Cook your microwave rice now if using
  • Serve up and enjoy
