Crispy Bacon Cod & Sweet Potato Stir Fry
Ingredients
- 2 cod fillets (you can use haddock or any other white fish)
- 4 rashers of smokey bacon
- 1 large sweet potato- pealed and thinly sliced.
- 2 tbs of green pesto
- Big handful of kale
- Half a bag of spinach
- 2 spring onions thinnly sliced
- (if theres anything in your fridge that needs using, get it in!)
- 2tbs Oilive oil
- Seasalt & black pepper to taste
Instructions
- Pre heat the oven and lets make a start with the fish.
- Put your fish into an oven proof dish, evenly spread 1tbs of green pesto onto each one.
- Place your bacon on top of the fish, 2 rashers each (you can use more if you like)
- Put the dish into the oven at 180c for 20 minutes or until the fish is flakey.
- Warm up a wok with the oil, once hot add the sweet potatos.
- Keep an eye on the pan, keep moving the potatos around the wok for a good 5-8 minutes until they are cooked, soft on the inside with a crispy edge.
- Start to add the kale, spinach and welt it all down for a further 5-6 minutes.
- Add the spring onions and cook for another 3 mins.
- Season to taste with the salt and pepper and turn down the heat to a very low flame.
- Get your plates ready, take the fish out of the oven.
- Start plating up with your potato stir fry first and put your fish fillet on top.
