Thai Red Prawn Curry
Ingredients
- 120g jasmine rice - microwaveable to save time
- 1 red repper
- 400ml tin coconut milk (light if desired)
- 100g sweet cherry tomatoes
- 160g fresh king prawns
- 1tbs of garlic paste
- 1tbs of thai red paste
- 1tsp fish sauce
- 1-2 tbs of oilve oil
- basil
- lime
- Brown sugar to season
Instructions
- Heat a little oil in a pan over a medium heat and fry the thinly sliced pepper for 2 mins
- Mix in the garlic paste
- Add a spoonful of coconut milk from the top of the tin, then add the thai red paste, stir fry for 2 mins the pour in the rest of the coconut milk.
- Put the tomatoes in and bring to the boil simmering for 4-5 minutes over a medium heat.
- Stir in the fish sauce and a sprinkle of brown sugar
- Add the prawns, stir them gently for 3-4 minutes until cooked.
- Warm your rice in the microwave and serve!.
- Garnsih with basil and lime
