Roast Cod Loin & Black Pudding with Smashed new Potato and Peas
Ingredients
- 2 cod loin - chunky pieces (ask your fish monger)
- 55g black pudding- sliced
- 1tsp Olive Oil
- 2 small ines cherry tomatoes (or use what you have)
- 200g frozen peas
- 300g new potatoes
- Seasalt
- Black pepper
- Butter
Instructions
- Put your potatoes in a pan and bring to the boil until slighlty soft, then turn off the heat.
- Heat the oven to 200C.
- Lay the cod, black pudding and tomatoes on a baking tray, with plenty of space between.
- Drizzle the fish with the oil and season with salt and pepper.
- Bake for around 15 minutes, until the fish is opaque and flakes apart when pressed.
- Drain the water from the pan then give the potatoes a good shake with the lid on.
- Warm some butter in a frying pan and add the potatoes, fry for 10 minutes.
- Add frozen peas and fry until the potatoes are crispy and the peas are soft.
- Time to plate,serve the fish over the hot crispy potatoe and peas with the black pudding and tomatoes,season to taste.
